Baked Chicken Parmesan

One of my favorite dishes I cook today is a recipe I got from a close friend over 10 years ago. I enjoy chicken parmesan at restaurants and always wanted to make it at home, but I’m not a fan of the frying part. It’s one of those dishes I indulged occasionally since I always felt so heavy afterwards.

When my friend mentioned she had a recipe that didn’t require frying it, I was excited to try it out and loved it!! It was so tender and delicious and on the plus side I don’t have to clean-up the greasy mess after cooking it. I now only make my chicken parmesan baked and my family loves it!! Even my Italian mother-in-law complimented me on the dish!!

One thing that’s great about this recipe is that you can do the prep work the day before, refrigerate it, then pop it in the oven the next day.

Serves: 6-8

Ingredients

16 chicken tenders

1/4 cup Italian bread crumbs

1/4 cup parmesan cheese, grated

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon dried parsley

2 (15-ounce) can tomato sauce

1 cup mozzarella cheese, shredded

2 eggs

olive oil

Directions

In a medium saucepan heat the tomato sauce over low heat and stir in dried basil and dried parsley. While the sauce is warming up preheat the oven to 375 degrees and lightly coat the bottom and sides of a 9×10-inch baking dish with olive oil. Whisk the two eggs in a bowl and set aside. Mix the bread crumbs, parmesan cheese, and paprika in another bowl and set aside. Dip the chicken tender in the bowl with eggs then cover the chicken in the bread crumb, parmesan, and paprika mixture. Place the coated chicken in the prepared baking dish and repeat with each piece of chicken. Once all the chicken is in the dish, cover the with the tomato sauce from the saucepan. Sprinkle the dried oregano on top of the sauce. Bake for 20 minutes. Take out the baking dish to add shredded mozzarella cheese on top of the dish and put back in for about 5-7 minutes to melt the cheese.

Let the chicken rest for 5 minutes before serving. While chicken is in the oven I prepare pasta and sauté spinach to serve with the chicken parmesan.
